Easy Healthy Strawberry Vinaigrette

Summertime = strawberries!  While I have been making the fruit salad pictured above for a couple of years now, I never thought to try a homemade dressing on it.

I found this vinaigrette recipe on allrecipes.com,  substituted fresh strawberries for frozen and … voila.  So easy! If you follow the link to my salad receipe you will see I also substituted sliced almonds for pumpkins seeds in the salad.

Topped with this light, healthy vinaigrette, this fruit salad can be a light lunch or add some protein and it’s a healthy dinner.  The recipe below is enough for 4 servings.

INGREDIENTS

1 cup fresh strawberries
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper

DIRECTIONS

Blend all ingredients together in a blender until smooth.  That’s it!
