I found a version of these pancakes on the internet a while back on fitfoodiefinds.com. It’s a keeper! So delicious, no grains, low carb. Kind of a melt-in-your-mouth texture. Super yummy!
You can also use a mashed banana in place of half the applesauce.
INGREDIENTS
6 large eggs
1 cup unsweetened apple sauce (I use Motts Healthy Harvest Granny Smith)
3/4 cup almond flour
1 1/2 teaspoon baking powder
3/4 teaspoon vanilla extract
1 1/2 tablespoon sugar free maple syrup
1/2 packet Truvia or other sugar substitute
DIRECTIONS
Whisk eggs in a mixing bowl. Whisk in applesauce, vanilla extract, maple syrup, and sweetener.
Whisk in almond flour and baking powder until well combined.
Heat a large pan or griddle until hot and then reduce heat to just below medium heat. Lay 3-4 silicone egg rings at a time on griddle and spray griddle and rings heavily with spray oil.
When rings are heated, pour about 1/3 cup of batter in each ring. Batter will rise.
Let cook for 3-4 minutes or until browned and firm enough to flip. Remove rings, flip and cook second side for 2-3 minutes or until browned and fully cooked. Whisk remaining batter before making more pancakes.
Serve with syrup – makes about 15 small pancakes.
